Gluten Free Rocket Salad with Feta Cheese, Red Onion and Pomegranate Salad
This vibrant salad makes the perfect accompaniment to an evening meal or can be served as a light leafy lunch. It’s a salad to impress!
- 200g feta cheese, cut into cubes
- 120g rocket
- 50g spinach
- ½ red onion, sliced thinly (if you don’t like raw onion, you could saute this for a few minutes before adding into the salad)
- ¼ lemon, juiced
- 1 garlic clove, minced
- 4 tbsp olive oil
- 2 pomegranates, seeds only
- Freshly cracked black pepper
WHAT YOU NEED TO DO
Pop the cubed feta cheese into a dish and squeeze over the lemon juice and leave it to marinade whilst you prepare the salad.
Cut the pomegranate in half and over a bowl, bash the back of the pomegranate with a spoon so that the seeds scatter out.
In a small jar (because you can give it a good shake) pour in the olive oil, minced garlic, salt and pepper, pop the lid on a shake well until thoroughly mixed.
In a lovely serving bowl, toss together the rocket, the spinach and sliced red onion and pour over the dressing before crumbling over the cubed feta cheese, and scattering the pomegranate seeds over. Enjoy as a fresh lunch or alongside a main meal.
