Gluten Free New Potato, Bacon and Spring Onion Salad

Every BBQ needs a great potato salad, so make this delicious potato, bacon and spring onion dish a staple of yours.
- 500g new potatoes, skins on and chopped into chunks
- 4 rashers of bacon, fat cut off and diced
- 4 spring onions, chopped short ways
- 4 chives, chopped
- Olive oil
WHAT YOU NEED TO DO
Put the chopped potatoes into a pan of cold salted water and bring to the boil. Lower the heat and cook for 10 minutes or until the potatoes are tender.
Meanwhile, fry off the bacon in a pan, until golden and crispy.
Drain the potatoes through a colander and shake to make sure they’re well drained, then tip into a large serving bowl and drizzle with olive oil, salt and pepper.
Add in the bacon pieces and sliced spring onions, and toss well so that they’re well coated.
Sprinkle over the top with the chives and enjoy hot or cold as a BBQ side!
