Serrano ham and cheese quesadillas are a brilliantly easy and quick snack, or make a perfect Spanish style lunch when served with salad, fresh guacamole and salsa. You can tailor the fillings of quesadillas to your family.
- 4 gluten free tortilla wraps
- 6 slices of Serrano ham (you can use a choice of ham really as long as you make sure it’s gluten free)
- 50g cheddar cheese, grated (make sure to grate your own cheese as shop bought can often be rolled in flour)
- 1 spring onion, sliced
- Sprig of coriander
- Shop bought salsa
- Shop bought guacamole
WHAT YOU NEED TO DO
Heat a large frying pan or griddle pan.
Lay out 2 tortillas on plates and cover with cheese and half of the ham. Scatter over some of the sliced spring onion before placing another tortilla on the top of each and pressing down gently. (You can brush each side of the tortilla with olive oil if you wish, but you don’t need to)
Gently lift one of the quesadillas into the pan and cook on each side for a couple of minutes, until golden and the cheese has melted.
Once cooked, carefully remove from the pan and onto a board. Gently slice into triangles and serve on the board with a sprinkling of coriander, fresh guacamole and salsa.
