Gluten Free Toasted Crumpets with Fried Egg and Cherry Tomatoes

Mix it up and top a toasted gluten free crumpet with a fried egg and fresh cherry tomatoes. It's great as a snack or breakfast before school.

INGREDIENTS

  • 2 gluten free crumpets
  • 2 large eggs 
  • Handful cherry tomatoes 
  • Butter

* This recipe is vegetarian 


WHAT YOU NEED TO DO

  1. Using your dedicated gluten free toaster, pop the crumpets in to toast for about 2 minutes or until lightly browned.
  2. Meanwhile, fry and egg in some olive oil and slice cherry tomatoes. 
  3. On a plate, butter the hot crumpets and top with the fried egg and freshly sliced tomatoes. Serve with salad as lunch, or on it's own for breakfast
