Gluten Free Toasted Crumpets with Fried Egg and Cherry Tomatoes

Mix it up and top a toasted gluten free crumpet with a fried egg and fresh cherry tomatoes. It's great as a snack or breakfast before school.
- 2 gluten free crumpets
- 2 large eggs
- Handful cherry tomatoes
* This recipe is vegetarian
WHAT YOU NEED TO DO
- Using your dedicated gluten free toaster, pop the crumpets in to toast for about 2 minutes or until lightly browned.
- Meanwhile, fry and egg in some olive oil and slice cherry tomatoes.
- On a plate, butter the hot crumpets and top with the fried egg and freshly sliced tomatoes. Serve with salad as lunch, or on it's own for breakfast
