Gluten Free Yorkshire Rhubarb Crumble

One of the most Yorkshire things about, well Yorkshire, is its rhubarb! Traditional rhubarb crumble is a tasty pudding, and even better when served with a dollop of cream.
- 500g Yorkshire rhubarb, chopped into chunks
- 120g caster sugar
- ½ tbsp ground ginger
- 4 tbsp cold water
- Gluten free crumble mix for the topping
WHAT YOU NEED TO DO
Preheat the oven to 180C. In a baking tray, lay out the chunks of rhubarb and sprinkle over the sugar and water, evenly. Shake the tin to cover, then put in the oven to roast for 15 minutes, until soft.
Once the rhubarb is softened, remove from the oven and transfer into a deep ovenproof pie dish; one that you’re happy to serve in. Sprinkle over the ginger and then add the crumble.
Make sure the gluten free crumble topping is evenly spread over, coating the whole of the rhubarb filling.
Pop the dish into the oven for 35 minutes, or until the crumble is golden and the rhubarb is bubbling through.
Serve with a generous helping of cream and fresh strawberries, and be careful when serving as the rhubarb will be like Vesuvius!
