All families tend love a burger; they’re quick, easy and delicious and can be tailor made to each individual, adding different toppings and condiments.
- 2 chicken breasts
- 4 gluten free bread buns, sliced
- 1 avocado, sliced
- ½ red cabbage, shredded
- Handful salad
- 2 tbsp gluten free mayonnaise
- 1 tsp garlic puree
- Salt and pepper
WHAT YOU NEED TO DO
Preheat a griddle pan. On a chopping board, cover one chicken breast at a time with cling film and using a meat tenderiser (or a rolling pin…) begin to flatten out the breast until it’s just about doubled in size. Do this for the second chicken breast, then slice them in half, so you have four pieces.
Season with salt and pepper then rub the garlic puree, paprika and olive oil over each piece before laying in the hot pan, turning after 5 minutes to get colour on the other side.
Meanwhile, whilst the chicken is cooking, prepare your buns by spreading mayonnaise on the top and the bottoms, then add a handful of the shredded red cabbage onto the base.
Once the chicken is cooked through, lay on top of red cabbage in the buns, then add the sliced avocado and salad on top before closing the bun.
Serve with homemade chips, or extra salad and enjoy!
