Gluten Free Refried Pinto Beans with Lime

Refried pinto beans are a healthy and filling accompaniment to a dish; we love these with fajitas!
- 2 tins (400g tins) of pinto beans, drained
- 2 tbsp sunflower oil
- 1 tsp chilli powder
- 1 tsp paprika
- 2 garlic cloves, minced
- Juice of ½ lime
- Sprinkle fresh coriander, chopped
- Cheese, grated (optional). Remember to grate your own cheese rather than ready bought which is not gluten free.

WHAT YOU NEED TO DO
Heat the oil in a deep pan over a medium heat.
Add in the garlic and fry off to get some colour on it then stir in the beans, paprika, salt and chilli powder.
Stir thoroughly then leave to bubble away, stirring occasionally for the next 10 minutes.
The beans will start to break down, or you can mash them if you like.
Squeeze in the lime juice and serve with a sprinkle of coriander on top for garnish.
If you’d like to add a sprinkle of cheese as well, then go for it!
