An exciting gluten free snack, accompaniment or vegetarian dinner; these sweet and sticky halloumi skewers with chilli are utterly moreish and perfect for the BBQ.
- 1 block halloumi cheese
- 4 tbsp olive oil
- 1 tsp chilli flakes
- Freshly cracked black pepper
- 100g fresh greek yoghurt for serving

WHAT YOU NEED TO DO
Soak some wooden skewers in water for about 15 minutes so that they don’t burn when on the BBQ or in the pan.
Slice the block of halloumi long ways into thick fingers, then insert the skewer lengthways through the cheese.
Drizzle with olive oil and sprinkle with the chilli flakes and freshly cracked black pepper. Once the cheese starts the melt, the cheese will take on the flavours.
Pop straight into a hot and dry pan, or onto the BBQ for 5 minutes before turning and colouring the other side also.
Serve with a refreshing greek yoghurt to dip into and get stuck in!
