Gluten Free Steak Tacos with Chilli and Lime Recipe

Tacos are a scrumptious bite size snack, or combined with refried beans, rice and various sides, can be turned into a quick and easy family dinner.


INGREDIENTS

  • 2 rump steaks, in strips
  • 2 limes, juiced
  • 8 small and soft gluten free tortillas
  • 3 spring onions, diced
  • 1 tsp chilli flakes (or add more to your liking)
  • Handful fresh coriander, torn
  • 3 tbsp olive oil
  • 1 avocado, diced
  • Cheese, grated (optional- remember to grate your own cheese as some pre-grated cheese can contain gluten)


WHAT YOU NEED TO DO

Top tip: You can marinade the steak in advance, ready to cook after a long day.

  1. Start by marinating the steak strips. In a bowl, squeeze in the lime juice, 2 tbsp olive oil, chilli flakes and ¾ of the coriander, then add in the steak. Stir well then cover and pop in the fridge until you want to use it. The longer the better.

  2. When you’re ready to cook, preheat a griddle pan. Meanwhile, in a bowl,  mix the diced spring onion and avocado in with the last tablespoon of olive oil and the rest of the coriander. This will act as your dressing.

  3. In the hot pan, pop in the steak strips and the juice, they won’t take long to cook at all so keep your eyes on them. Turn them after 30 seconds to colour both sides, then serve slightly pink (or further if you prefer)

  4. Remove the steak from the pan and leave to rest for a minute. Meanwhile, you can toast your tortillas in the hot pan, for 20 seconds either side. Then pile up on a plate and pop on the table.

  5. Serve everything on the table, so your family can build up their own soft tacos, with steak and avocado and spring onion topping. Then sprinkle some cheese on the top for the perfect finish.

 

Suggested sides: Refried pinto beans with lime  / Mexican corn on the cob
