
A vibrant tomato and red onion salad adds a splash of colour to any plate of food, or is refreshingly delicious on its own.
INGREDIENTS
500g mixed tomatoes
1 red onion, finely chopped
1 tbsp gluten free wholegrain mustard
1 tbsp honey
Juice of ½ lemon
6 tbsp olive oil
½ tsp garlic puree
Salt and pepper
WHAT YOU NEED TO DO
1. Wash the tomatoes well then chop freely, into different sized chunks, to add some texture to the dish. Place them in the bowl that you'd like to serve in.
2. Slice the red onion then toss into the tomatoes.
3. In a little bowl or jar, mix together the gluten free mustard, vinegar and honey with a pinch of salt and pepper.
4. Pour over the salad and mix well. You can make the dressing ahead of schedule, but don't pour it over the tomatoes until you need it.
